Jonas Colting shares his recipe for a healthy treat: "Colting's Cocoa and Coconut Snack."
Ingredients
- Almonds
- Walnuts
- Pecans
- Hazelnuts
- Pumpkin seeds
- Organic cocoa
- Freshly ground coffee
- Shredded coconut
- Dried dates
- Cold pressed extra virgin coconut oil
Preparation
- Take equal amounts of all the nuts and and add a liberal serving of pumpkin seed. Run these dry ingredients in a food processor and ground it to a fine flour.
- Remove the nut flour and grind the dates and shredded coconut in the food processor.
- Add nut mixture back to the food processor. Add coffee and cocoa to taste and mix together.
- Remove mixture from food processor and place it in a large bowl. Add the coconut oil and mix it all together by hand.
- Roll the paste into small nibbly balls and sprinkle them with shredded coconut.
There is no particular amount of each ingredient so experiment to find your perfect mix of taste and texture. It really doesn´t matter, it´s all good and healthy!
